The healthiest + best tasting Mac’NCheese

you have EVER tried!

I was skeptical, but now I believe in the recreation of delicious Mac N Cheese that does not detract from your health goals & actually supplies your body with incredibly healing foods like spinach, broccoli, quinoa and turmeric.

All my athlete & busy body friends who need CALORIES and have sore joints..

This recipe is for you!! Why? Because pasta is an easy way to get a ton of calories down and turmeric is incredibly anti-inflammatory for your joints. You can even taste it in this dish. It just adds to the cheese flavor!

You could totally add meat to this dish if you would like! I would stick to a moderate amount of ground beef, bison, turkey or turkey bacon! {I’m not a huge proponent for pork-if you can avoid it, as delicious as it really is. I will save the reason why for another post!}

Also, moms on a time and monetary budget, add this to your recipe list! It’s quick, easy, and inexpensive to make. It will fill your kiddos up and leave leftovers for later.

This recipe is dairy free, gluten free, and vegan (unless you add meat). It could be paleo if you can get past the brown rice in the pasta! Anyways, it fits a whole lot of dietary needs and in my opinion is pretty much safe for everyone!


Recipe—

(1) Boil pasta, drain and rinse with COOL water to prevent noodles from clumping together

—save a cup or so of the boiling hot water for your next step

—blend cashews NOW before next step. it’s easiest to just blend a bulk batch all at once in a large blender

(2) Lightly steam veggies to add in pasta & prepare desired meat

-if using spinach I keep it raw and just place it in the bottom of a bowl before I add hot noodles on top after 1st step, then cover with a lid. The heat from the noodles will soften the spinach without having to steam and turn it to mush!

(3) Whip up the cheese sauce in a blender: 2 medium golden potatoes (steamed/boiled), 1 large steamed carrot, 1/4 c cashews blended, 1/3 onion, 2-5 garlic gloves, juice of 1 lemon, 1 tbsp tumeric, 1 tsp paprika, pinch of Himalayan sea salt

(4) Pour cheese over noodles. Stir in veggies and meat. & ENJOY!



RECIPE NOTES:

*I use a bag of gluten free noodles from Aldi. The brand is called “Live G Free” and they’re made from JUST organic brown rice & quinoa.

*Cheese sauce can be made with nuts/without nuts just take cashews out and it will still turn out tasty I promise! I often skip the nuts when keeping my overt fats low to allow my body to detox better.
